So, I eat a lotta burgers. I know I should eat fewer burgers, for a lot of reasons, but I don’t do that, for any of those reasons, I do the opposite — I eat more burgers —for purely selfish reasons.
Oh wait, did I say selfish? I meant selfless! Y’see, ever since I started handing out “Burger of the Year” awards, chefs, cooks, and restaurateurs have been wanting that award. I know they want it because they literally say to me, “I want that award.” So, now, whether my cardiologist recommends it or not, my sworn duty as the guy who gives out the award, is to eat as many burgers as I can.
With that in mind, I tried a fantastic burger from Griff’s Kitchen & Bar out n Candler last week. It’s not what I ordered. I ordered and devoured an amazing pork shoulder dish that you can read about on Ashvegas. The burger was a gift from the chef, who asked if he could send me home with it, because he wants me to try it, because he wants that award.
When someone says to me, “Can I send you home with a burger?” I don’t say no.
Self. Less.
Above: Chef Ian Griffin kept the burger and toppings separate from the bun and lettuce, and he told me himself that he cooked the burger rare, so that I could reheat it later, and it would be medium rare. I can’t even tell you what a frickin’ difference details like that make to me.
When I did reheat this burger the very next day, it was amazing! The flavor of the high quality meat and unique toppings where very good, and burger stayed juicy, while the bun stayed… bunny. I don’t wanna say dry, because it was nice and soft and awesome, but it wasn’t all mushy and soaked with burger juice and toppings and stuff, y’know? It was buntastic. And the lettuce stayed cold and crisp.
I am not a fan of hot lettuce.
